Veggie Jumbalaya - Free on Green
1 Onion
1 Green Pepper
1 Fresh Chili
2 Celery Sticks
2 Garlic Cloves
1pt Bovril Stock
2 Cans Chopped Toms
1tsp Chili Powder
Salt & Pepper
9oz Long Grain Rice
300g Quorn Chicken Style Pieces
1 Can Red Kidney Beans
Roughly chop onion, pepper, celery and chili, crush garlic. Place in a large pan with stock and bring to the boil. Cover and simmer for 5 mins
Add Toms, chili powder and season. Bring back to the boil
Stir in rice, quorn and kidney beans, cover and cook on low heat stirring occasionally.
When rice is cooked and most of liquid absorbed, serve

Cheesy Spinach Cannelloni - Free on Green (if cheese a Healthy Extra otherwise add 6 syns) Serves 4
6 Sheets Dried Lasagne
227g Baby Spinach Leaves
1 Egg
4 Garlic Cloves
170g Reduced Fat Cheddar Cheese
Small Handfull of fresh Basil Leaves
2 x 250g pots of Quark
1/4 tsp Ground Nutmeg
Salt & Pepper
500g Passata with Garlic & Herbs
Preheat Oven to 200C. Soften lasagne sheets, drain and cut each sheet halfways. Blanche the spinach for 2 mins, drain thoroughly and finely chop. Beat the egg, peel and crush garlic. Grate the cheese and roughly chop basil
Place the Quark in a bowl and beat with a fork unil smooth. Add spinach, egg, garlic, basil and nutmeg. Season well until well combined
Spread 2-3 tbsp of mixture down the centre of each lasagne sheet and then roll into a tube, overlapping the edges slightly
Spread a layer of passata over the base of an oven proof dish and place tubes seam side down in a single layer in the dish. Pour over remaining passata and sprinkle with cheese.
Place in oven for 20-25 mins until bubbling and lightly golden. Remove from oven and serve immediately _________________ aut viam inveniam aut faciam! |

Pasta Quiche - Free on Green (if cheese a Healthy Extra otherwise add 6 syns)
2 Packets Pasta n Sauce - any flavour you fancy as long as its one of the syn free flavours
1 Small Chopped Onion
6 Chopped Mushrooms
1 Chopped Pepper
28g Cheddar Cheese Grated
2 Eggs - beaten
Herbs (Optional)
Salt & Pepper
Make pasta and sauce as per instructions, using just water.
Dry fry onion, mushrooms and pepper
When pasta is cooked add vegetables, herbs, season and allow to cool slightly.
Add eggs and mix well. Pour into quiche type dish and sprinkle on cheese, place in a preheated oven (180C) and cook for about 30mins until slightly brown and set.
Eat either hot, or wait until cold and slice for lunch boxes _________________ aut viam inveniam aut faciam! |

Spicy Hash Browns - Free on Green
454g Potatoes
2 Green Chilies
2 Eggs
2 tbsp chopped fresh Coriander
Salt & Pepper
Fry Light
Preheat oven to 200C. Peel and grate potatoes. Then squeeze all moisture from potato (I use a T.Towel). Deseed and chop chilies and beat eggs
Mix potato, chili, egg and coriander together and season well. Place 4 metal cooking rings on a baking sheet, spray with fry light and divide mixture between them.
Place in oven for 25 mins until cooked through and golden _________________ aut viam inveniam aut faciam! |

Chili Con Carne - Free on Green (if mince a Healthy Extra otherwise add 6 syns) Serves 4
(I came up with this recipe as my partner is not really keen on Quorn mince, so I mixed in Extra Lean Mince beef - you can use just Quorn or just beef)
1 Onion
2 Peppers
2 Garlic Cloves
1 Can Kidney Beans
1 Can Chopped Toms
1 tbsp sweetner
1 tbsp Paprika
1 tsp Chili Powder
Salt & Pepper
175g Extra Lean Mince
175g Quorn Mince
1 Fresh Red Chili
1 Can Baked Beans
200g Passata
Fry Light
Spray a pan with fry light. Chop onion, peppers and chili and fry until soft. Add all mince and continue to fry until all meat in browned
Add baked beans, kidney beans, toms, passata, sweetner, chili powder, paprika and season well
Cook for about 20 mins and serve with rice _________________ aut viam inveniam aut faciam! |

Moroccan Pie - Serves 4 - 1/2 Syn per serving
Fry Light
1 Large Onion, finely chopped
350g Quorn Mince
1 Garlic Clove Crushed
1 inch piece of ginger finely chopped
1 tbsp each ground cpriander, cumin and paprika
1 tsp cinnamon
salt & pepper
3/4 pt stock (Vecon or Bovril)
113g fresh apricots stoned & chopped
Juice of 1/2 lemon
Topping
681g waxy potatoes unpeeled and cubed
large pinch of saffron
2tbsp very low fat natural fromage frais
1 garlic clove crushed
pack of freshley chopped coriander
Spray a non-stick saucepan with fry light and cook onion gently for 10 mins. Add mince and cook for 10 mins until browned all over
Stir in garlic, ginger and spices and season to taste. Pour the stock over the mixture, bring to the boil, cover and simmer for 10 mins, adding a little water if necessary. Stir in apricots and continue simmering for 15 mins. Add lemin juice and check seasoning. Transfer mixture to oven proof dish
Meanwhile, place the potatoes in a large pan of lightly salted water add the saffron, bring to the boil and simmer for 10-15 mins, drain and mash roughly with a fork
Stir in fromage frais, garlic and coriander. Spread topping over the quorn mixture and bake in preheated oven (200C) for 30 mins until potatoes are crisp and golden _________________ aut viam inveniam aut faciam! |

Syn Free Doritos
Place some dried lasagne sheets in a bowl of boiling water to soften.
Remove and dry, cut into triangles.
Spray a baking sheet with frylight and place triangles on, coat with desired seasoning, ie Salt & Pepper, Spicy, etc
Place in a very hot oven - watch very carefully - when then expand and become very slightly brown, remove and allow to cool (they do burn exceptionally fast). Eat on own or with homemade syn free dips _________________ aut viam inveniam aut faciam! |
