parsnip and ginger soup

its a jamie oliver recipe .im not a lover of soups but this is perfect for a cold day as the ginger keeps your insides feeling warm.
you need

2 cerlary ssticks
2 veg stock cubes
800g parsnips
ginger(about the size of your thumb
two onions
two cloves of garlic
2 carrots
little olive oil

in a large pan place your roughly chopped parsnip,onion ,garlic,ginger.celary and carrot till onions start going golden.
with boiling hot water from the kettle 1.8 litre disolve your stock cubes in,then add to the veg .bring to boil,then let simmer for 10 minutes.then blend it .

serve with some nice croutons.

this is the perfect soup in very cold weather and is perfect in a flask
