Green Chilli PickleThis is one for the Chilli heads!!
Green Chilli Pickle (Hari Mirch Ka)
225g (8oz) Fresh green chillies
300ml (half pint) Vegetable oil
15ml (1 tbsp) Paprika
15ml (1 tbsp) Fennel seeds
15ml (1 tbsp) Mustard seeds
5ml (1tsp) Turmeric
30ml (2tbsp) Salt
1. Cut the chillies in half lengthways and put into a clean, dry jar.
2. Heat the oil very slightly until just warm and add all the spices and salt. Stir well and leave to cool for 10 minutes.
3. Pour the oil over the chillies and mix well. Leave the jar in a warm place for 2 or 3 days, stirring the contents from time to time.
4. Leave to mature in a cool place leaving at least one week before eating.

thats interesting, how is it going to compare to say Lime pickle?

It has an aniseedy, smokey taste to it - probably caused by the interaction of the fennel seed and the smoked paprika I used. You obviously wouldn't want a heap of this on the side of your plate but it is a very tasty condiment to have along with your more usual lime pickles and mango chutneys.
The pickle is nearly a month old here and is maturing nicely.
It has some great colour to it thanks to the paprika.
