Cream of ten veg soup

I made some soup yesterday which was so good that I thought I'd repeat it today.

It's called ten veg soup because, well, it's got 10 different vegetables in it!! You don't have to worry about getting your 5 portions of fruit and veg with this soup.  

This particular soup consists of (in various amounts but roughly a cup of each):

1.Onion
2. Potato
3. Swede
4. Turnip
5. Celeriac
6. Parsnip
7. Sprouts
8. Carrot
9. Red Cabbage
10. Leeks

Plus a good table spoon of fresh finely chopped parsley and a teaspoon of finely chopped fresh thyme.

Add a good knob of butter (about 1.5 tablespoons) to a large pan, when melted add all your veg and herbs. Cook over a moderate heat until some of the veg softens slightly (don't let it brown the veg at all).



Add two tablespoons of plain flour over the vegetables and stir well, cook for a further two minutes over a moderate heat.





Add a good vegetable stock (I used 2 pints) or, like I have, the liquid drained from the Sunday lunch vegetables. It is better if the stock is already hot.



Once you have gradually added your stock and kept stirring the contents of your pan you can leave it to slowly simmer for half an hour.



Once you have simmered your soup add 200ml of single cream gradually, stirring all the time.



Once all the cream is in add your salt and pepper to taste.




You can add whatever vegetable you like but I would certainly recommend the inclusion of celeriac because of it's celery/savoury taste.

Simply serve with a large chunk of bread and enjoy.

This soup thickens as it cooks and when served with nice crusty bread is real winter warming food. :thumbr:

Been off all week, first with heavy cold, then a houseful of V&D.

Fancy trying this, and will also make a couple of stews (one beef, one chicken), as they use mostly the same vegetables.

V&D = vomiting and diarrhoea (i.e. puking and cr4pping)

VD = venereal diseases (ie. knobrot)

Stew was lovely, may pop out to a farm shop and get some veggies today and make the soup.

Made it with:

onion
leek
brussels
potatoes
carrots
swede
turnip
parsnip
celeriac and

BEETROOT.

I cooked it all, and it turned pink, but tasted very nice. Made about 10 portions.

When it had cooked, I took out about 2 ladles of veg, then blitzed the rest with a hand blender, then put the veg back in.

Very very tasty, even if it is pink.
